Indian Chicken Curry

When I worked for IBM, I met and made friends with a few Filipino-Indians. One of them showed me the way on how to cook an authentic Indian style curry.

What you need:

1K chicken (I prefer breast fillet)
1 carton of coconut milk (bought from the supermarket)
1 medium sized potato, peeled, cut into chunky cubes and fried
1 large carrot, peeled, cut into chunky cubes and fried
1 medium bell pepper, cut into cubes and fried
3 cloves garlic
1 medium onion chopped
2 teaspoons of yellow curry powder dissolved in 1 small carton of thick coconut milk
3 tablespoons of oil
salt and pepper to taste
*additional cayenne pepper for added spice
*you can substitute the coconut milk with evaporated milk, just add water before step 4.

What to do:

1. Saute garlic and onion
2. Add the chicken after the onion is caramelized
3. Simmer for 5 minutes or until chicken is cooked
4. Add coconut milk with curry powder and simmer for 5 minutes or until the sauce is quite thick.
5. Put in the pre-fried potatoes, carrots and bell pepper, put salt, pepper and additional cayenne pepper to taste, simmer for another 5 minutes or wait until the sauce is thick (don't boil as the coconut milk might turn into oil).

Serve it with pita bread or hot rice. Enjoy!
