Cream Dory with Mayo Garlic Dip

     
After tasting this fish for the first time, I said to myself, I'll look for other ways to cook this fish and make my own menu from it. So far, I have gotten around to at least three recipes and they were all edible. =)

For this dish you will need:

4 pieces of cream dory fillet
1 garlic head, finely chopped
1 tablespoon of unsalted peanuts, grounded
1 medium lemon, juiced
1 tablespoon each of thyme, basil and coriander or cilantro finely chopped
salt and pepper to taste
About 5 tablespoons of Olive oil

For the dip:

1 cup of light/lite mayonnaise
1 garlic head crushed
1 tablespoon of coriander or cilantro
1/2 teaspoon of honey mustard sauce
salt and pepper to taste

To prepare:

> Marinate the fish in lemon, herbs, salt and pepper.
> While marinating the fish, heat the olive oil in a non-stick pan and toast the garlic along with the peanuts.
> Once the garlic is done, remove from the pan and set aside.
> Sear the fish on both sides first using high heat. Once both sides of the fish is seared, turn the heat down and continue cooking the fish until it is well cooked.
> Place the fish on paper towels to drain excess oil.

For the Dip:

Combine all ingredients in a bowl and whisk until smooth.

To serve:

You can serve the fish with freshly steamed rice, topped with the sauce and some toasted garlic with peanuts. Enjoy it while it's warm.
