Teaching the hubby to cook isn't too difficult - uhm, lemme get back to yah on that. Anyway, he tries to follow directions, he really does.So, here's a recipe that my mom shared to me and I tried to teach to the hubby last weekend - NOODLES! Pancit puti, it's just glass noodles without soy sauce. Simple, easy to prepare and delicious!
Here's what you'll need:
1 chicken breast (cut in half and boiled - then cut into cubes, set aside chicken stock)
1 small cabbage, shredded
1/4K Baguio beans, thinly sliced
1 medium carrot, thinly sliced
1 sprig of kinchay (flat leaf parsley)
2 whole garlic heads, finely chopped
1 medium onion, finely chopped
500 grams of Pancit Bihon (rice noodles, washed till soft but not immersed in water)
salt and pepper to taste
3 tablespoons of oil
What you need to do:
1. Toast 3/4 of the fresh garlic and set aside
2. Saute garlic and onion, then add cube chicken, carrots and beans in a pan. Simmer until vegetables are half done.
3. Add salt, pepper, cabbage and kinchay last. Cook for about 3 minutes.
In a separate pan, add some of the toppings and add chicken stock. Bring it to a boil.
Once the stock boils, add the noodles and simmer until the noodles are cooked.
Serve warm, top with veggies and toasted garlic
