Recipe | Peanut Butter Marshmallow Granola Balls

I love granola bars, especially those with peanut butter. However, there are times that I found them a bit too sweet. So, while we were planning our weekly meal, I suggested to hubby that I would make our own snacks. He agreed and we decided on peanut butter granola balls.

Here's what you need:

1 bag of lose granola
2 tablespoons of lite butter
1 small bottle (350g) of peanut butter
12 pieces of marshmallows

What you need to do:

  1. Put lite butter in a bowl and heat it. Once it's melted, place the marshmallows in until it completely melts.
  2. Mix all the other ingredients in a separate bowl, including 1 tablespoon of butter. Once it's thoroughly mixed, add the melted mallows.
  3. Grease the baking pan with some butter and using an ice scream scoop, place 6 balls on it.
  4. Place the pan in the toasted oven and bake for 5 minutes or until the crust is golden brown. 
  5. Let it cool and serve.

This recipe does not include sugar or flour. I used the melted mallows as my binding agent to make sure that the balls stay in shape.
