Recipe | Simple Baked Spicy Chiken


What you'll need:

1/2K chicken breast fillet
1/4 cup soy sauce
pepper
crushed chili pepper

What you need to do:



Marinade the chicken in soy sauce, pepper and crushed chili pepper overight.

Place the chicken on a greased pan and put it in a pre-heated toaster oven. Cook for 10 minutes or until golden brown.






Serve with steaming brown rice.

Recipe | Spicy Chicken and Bacon Sandwich


 What you'll need:

1/4K menudo cut chicken breast fillet or 3 pieces of chicken breast fillet cut into cubes
3 tablespoons raw honey
3 tablespoons dijon mustard
Salt and pepper to taste
2 tablespoons lite butter

1/4K bacon thinly sliced and fried (set aside)

2 tomatoes sliced
1 small head of lettuce
4 pieces of baguette

To make the spicy chicken filling:

1. In a pre-heated pan, put the chicken and stir fry until golden brown
2. Once it's done add other ingredients - mustard, hone, salt and pepper (amount of pepper dictates level of spiciness)
3. Coat the chicken evenly but continuously stirring it in the pan.
4. When it's cooked, set it aside and let it cool.

To serve;

1. Cut the baguette in half
2. Open it and add a layer of lettuce, bacon, tomatoes and the spicy chicken

(If you want you can add mayonnaise to your sandwich. Although in this case, we preferred to eat it as it was.)

Serve the sandwiches. This makes 8 servings (half the 4 baguettes)

Recipe | Veggies in White Sauce


After the asthma scare, hubby and I decided to prepare healthier meals at home. Here's another veggie recipe that you might like.

What you need:

1 small broccoli head, cut in bite sized piecces
1 bunch of asparagus spears
1/4k young corn
12 pieces of shrimps, de-shelled and de-veined
1 tofu block
3 tablespoons lite butter
salt and pepper to taste

For the sauce

1 small can of evaporated milk
1 small can of all purpose cream
salt and pepper to taste

To prepare:

In a pan, heat the butter and stir fry the shrimps. When it's done, cook the tofu.
Then add the veggies, add salt and pepper and cook them until half done.
Take it out of the pan and set  aside.

In the same pan, stir in the all purpose cream until thinned. Add the milk and stir to thicken. Add salt and pepper.

   
Plate it and serve with brown rice.
